egg plant anybody?

 Didn’t know what to do on a first rainy day, so i cooked 🙂

it’s not like i don’t like cooking…i just see it as a waist of time, but yeah, lots of time today to waist, thanks to today’s weather…so, here goes..

i’ve been receiving this weekly veggie basket from a local farmer for almost 2 years, so i eat a lot of vegetables. salad for lunch, another salad for dinner – whatever doesn’t require coooking 🙂

but today, due to the weather and, you know, because not all the veggies can be aten raw, i decided to roast eggplants.

  so i have 2 here – white and purple. cut them into 12-16 wedges and leave with some rock salt for a couple of minutes.

 now mix your oil with whatever spices you like (oregano abd black pepper here) and pour in over the wedges.

 stick them into the oven for 20 min, then turn them over and give another 5 min

 chop your parsley 🙂

 plate the eggplant veggies and sprinkle with parsley and vinegar of you like 🙂 enjoy!!
